ratatouille before and after

Well...I was pretty excited to make this today.  I took a picture with my phone.  Afterwards, I thought I'd challenge myself and see if I could improve the photo.  Besides the the Photoshop challenge, it was really delicious!!!

I combined 2 recipes for this, here goes...

In a small 3 quart corning ware, I drizzled olive oil.
I started layering (in thin slices) zucchini, tomato & eggplant, till I got to the top of the pot.
In between the zucchini & tomato I would put garlic & basil.
In between the tomato & eggplant I would put onion, thyme & salt.
Every other layer I would drizzle a little more olive oil.
I put the corning (covered) on a gas burner as low as it would go for 2 1/2 hours.

This was well worth it.  I was surprised at how good it was!!!
